This is a quick, fool proof meal you will go to again, and again. So good and oh so good for you!
Ingredients
  • 2 lbs of frozen chicken breast tenders
  • 1 can of corn
  • 1 can of black beans
  • 1 can of rotel tomatoes
  • 1 cup, or more if you like, of your fav salsa
Instructions
  1. Place crock on high
  2. Put chicken in the bottom of the crockpot
  3. Put together all ingredients in the crockpot
  4. Stir to combine
  5. Cover and let cook for four hours or until done.
  6. Enjoy!

Easy Peasy Crock pot corn bread that is a perfect pair with any soup or beans!
Ingredients
  • 1 1/2 cups of Aunt Jemima Buttermilk Corn Meal Mix
  • 1 cup of Corn meal
  • 1-1 1/2 cups of low fat buttermilk
  • 1 bag of frozen corn
  • 1 cup of cheddar cheese
  • 1 egg
  • 1/2 cup of egg whites
  • 2 tsp of garlic
Instructions
  1. Place Corn Meal mix and corn meal into a mixing bowl
  2. Add in buttermilk, egg, and egg whites
  3. Mix throughly
  4. Add in frozen corn, garlic, and cheese
  5. Spray crock with non stick spray
  6. Put mixture in crock and place on high for 2-3 hrs or until brown.

Note this was made in our mini 2.5 quart crock.  It would work fine in a larger crock probably up to around 4-5 quarts, it will simply be thinner!

An all in one meal, with sides included.
Ingredients
  • 5-6 pork chops
  • 1 packet of taco seasoning
  • Aluminum foil
  • 1/2 cup of water
  • 1 head of broccoli
  • 1 potato per person
  • 1 corn on the cob per person
Instructions
  1. Place porkchops in bottom of crock.
  2. Coat the pork chops in taco seasoning
  3. Add in 1/2 cup of water
  4. Chop broccoli into florets
  5. Make a packet of foil for broccoli
  6. Wrap potatoes in foil
  7. Break corn in half and wrap in foil
  8. Place wrapped corn on top of chops
  9. Followed by potatoes and topped with packet of broccoli
  10. Cook on high for 3-4 hrs or until veggies are tender and meat is cooked
