Perfect boiled eggs every time. I have read that you can boil eggs in the crockpot without water, I tried and failed!! This is super simple and always works! 6-12 eggs on high for about 2 and a half hours and you get fantastic eggs!
Ingredients
  • Eggs
  • Salt
  • Water
Instructions
  1. Fill your crockpot with eggs. Make sure not to stack the eggs
  2. Fill your crockpot with water but only enough to just cover the eggs
  3. Salt the water liberally
  4. Set on high for 2 and a half hours
  5. As soon as the time is up, remove the eggs and place them into a cold water bath to stop them from cooking.
  6. Peel and enjoy!

This is so easy and it WORKS!!!  Place your eggs into the crockpot and fill it with just enough water to cover them.

Place on high for 2 hours 30 minutes

Once the time is up, quickly place them into a cold water bath to stop the cooking process.

This is a fantastic and simple recipe that is going to help free up your stove especially during the holidays! Remember that if you choose to use this recipe, potatoes cook differently so give yourself at least 45min-1 hour of extra time. The final product will keep well on warm!
Ingredients
  • 5 pounds of potatoes
  • 1 stick of butter + 1/2 stick of button
  • 1/2 cup of sour cream
  • 3 oz of Velveeta cheese
  • 1/2 cup of milk
  • 1 tablespoon of garlic powder
  • 1 tablespoon of salt
  • 1 tsp of pepper
Instructions
  1. Cut your potatoes and add to the crockpot
  2. Add water to the crockpot until the potatoes are covered
  3. Add 1/2 stick of butter to the crockpot, cover and cook on high for 5 hours.
  4. Once the potatoes are softened, strain and place into a mixing bowl
  5. Add butter, milk, sour cream and velveeta cheese. Mix with a mixer until smooth. If needed add more milk or cream.
  6. Add the spices and transfer back to the crockpot to keep warm until served.

 

Cut your potatoes into squares.  Try to keep them relatively consistent but it’s not critical.

Add potatoes to the crockpot and then cover with water.  Add butter to the crockpot

The more potatoes you add, the longer it will take to cook.

Once the potatoes are soft, strain the potatoes, place in a mixing bowl and add your ingredients and blend.

Add back into the crockpot to keep warm until serving.

This is a great spin on a classic that is normally fat loaded but we have lightened it up and it taste great!
Ingredients
  • 1 1/4 cups of all purpose flour
  • 3/4 cup of corn meal
  • 1/4 cup of stevia (or other low calorie sweetener)
  • 1 tsp of baking soda
  • 1 tsp of baking powder
  • 1/2 tsp of salt
  • 1 cup of buttermilk (low fat or fat free)
  • 1/4 cup of egg whites
  • 1/4 cup of canola oil
Instructions
  1. Put all dry ingredients into a mixing bowl
  2. Whisk to combine dry ingredients
  3. Add in milk
  4. Add in egg whites & oil
  5. Stir to combine
  6. Spray crock with nonstick spray
  7. Place mixture into the crockpot
  8. Spread out with spoon evenly
  9. Cover with paper towel to absorb moisture
  10. Place lid on crockPot and turn it on high for 2 hours or until toothpick comes out clean

I was absolutely thrilled with how this turned out!! I wasn’t sure if the noddles were going to be soggy or if it would even turn out! This exceeded my expectations and I plan on bringing the mac and cheese to picnics and church functions in the future!! I hope you enjoy it as much as we did, my mother-in-law described this dish as, ‘off da hook’!
Ingredients
  • 4 cups pasta elbows
  • 1 small red pepper
  • 1 small yellow bell pepper
  • 1 jalapeno pepper (remove seeds)
  • 2 cups milk
  • 2 cups of water
  • ¼ tsp red pepper flakes
  • ¼ tsp cayenne pepper
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 small box of Velvetta cheese
Instructions
  1. Cut up the peppers and place them into the crockpot
  2. Add milk and water and cheese. We did not slice up our cheese, but we would recommend that you do, so that the cheese melts quicker. Cook on high for about 45 minutes
  3. Add your pasta and cook on high for about 45 minutes to an hour. Add additional milk for creamer consistency if desired.
  4. To finish it off, add small cubes of velvetta cheese which will melt into the macaroni making it super delicious!
Notes

Once the macaroni is finished, you will need to remove it from the crockpot. If you don’t remove it, the macaroni will become soft and mushy.

I like to cut the peppers relatively small so that they cook down and are not crunchy.
